For a concasse tomato, take a washed one and score the opposite of the stem with an X. Now start to peel the tomato from the V's removing just as little flesh with the skin as possible. Having this done, cut the tomato into segments following the edges that are now visible and empty them, as we are only interested in the flesh, not the seeds nor the pulp. Peel the brown layers of the onion, wash it and cut it in halfs along the stem. Cut each half in nearly paper-thin slices, flip and repeat. You should now have your onion thinly minced, if not just make sure it is. Peel and mash the avocado and mix it with the minced onoin and with the concasse tomatoes previously minced as thin as the onion. Now add the juice of the halved lemon, this is to prevent rancidness; and salt according to the amount of tomato and onion; and some olive oil so it looks shinny. The amount of mashed avocado, minced onion and minced concasse tomato must be roughly the same, so that no one stands out in the mixture. Tips: I usually save the pulp with the seeds and the skin of the tomatoes that I make concasse and blend them later with a small amount of bread, some salt and olive oil. It is delicious spread on a toast with thin slices of a strong (non-blue) cheese over it. To peel the avocado it helps to make a small cut around it and twist both ends. Now it is easy to empty it with a spoon and use a fork to mash it. Some people advise you to scald the tomatoes before peeling them, but I don't think the time you spend boiling the water worths it. | Para un tomate concasse, lavar uno y marcar el lado opuesto a la raiz con una X. Empezar a pelar el tomate a partir de esos picos quitando solo la piel, sin carne. Partir ahora el tomate pelado en gajos, dejándonos guiar por las lineas que se ven y vaciarlos, pues solo nos interesa la carne, no la pulpa con las semillas. Quitar las capas oscuras de la cebolla, lavarla y cortarla en dos mitades a lo largo de la raiz. Picar cada mitad en láminas muy finas, girar y repetir. Ahora se debería tener la cebolla muy picadita y si no, asegurarse de que lo sea. Pelar y machacar el aguacate para luego mezclarlo con la cebolla picada y los tomates concasse que deben haberse picado tan finos como la cebolla. Añadir el zumo del medio limón para prevenir la oxidación, sal de acuerdo a la cantidad de tomate y de cebolla; y aceite de oliva para que quede brillante. Las cantidades de aguacate machacado, ceboola picada y tomate concasse picado debe ser mas o menos la misma, de modo que ninguno destaque sobre los demás en la mezcla. Trucos: Normalemente guardo la pulpa y la piel de los tomates que hago concasse para triturarlos con un poco de pan, sal y aceite de oliva. Esta muy bueno untado en pan tostado y con unas finas capas de un queso fuerte (no azul) por encima. Para pelar el aguacate realizar un pequeño corte al rededor y girar los dos trozos. Así resulta fácil vaciarlo con una cuchara y machacarlo después con un tenedor. Algunos recomiendan escaldar los tomates antes de pelarlos, pero creo que no merece la pena el tiempo invertido en hervir el agua. |

First, wash the endives and cut a small cone out of the bottom or root side, this is to prevent the salad from ending up too bitter, now slice them and cut into pieces, not too big and not too small. Take the boiled beetroots and dice them after some straining. Mix the cutted endives and the diced beetroots with some chopped walnuts. Add mayoinnase and it will be ready to eat as soon as it has settled for a while . Tips: The Belgium endives and the Beetroot (already boiled) are usually found in small packages of three or four pieces in the stores, use one package of each for a three to four people salad. I like to prepare it the day before I'm going to eat it, because then all the flavours have fully developed. | Primero lavar las endivias y quitar un pequeño cono de la base o raiz, esto se hace para que no amarguen demasiado, cortar en rodajas y trocear, no picar. Escurrir las remolachas y cortarlas en dados. Mezclar las endibias, la remolacha y las nueces picadas y añadir mayonesa al gusto. Dejar reposar para que se asienten los sabores antes de consumir. Trucos: Las endibias y la remolacha se suelen encontrar en pequeños paquetes de tres o cuatro piezas en las tiendas, para preparar una ensalada para tres o cuatro presonas, basta usar un paquete de cada. Personalmente, me gusta prepararlo un día antes de cuando lo vaya a consumir, pues así los sabores se han desarrollado por completo. |

Provide yourself with a handblender, a beaker and a lemon squeezer. Break the egg into the beaker and pour the juice of half the lemon too. Add enought olive oil to fill up to 3/4 of the beaker, a pinch and a half of salt and a pinch of sugar. Introduce the handblender and start to blend from the bottom, raising it very slowly while feeling how the emulsion works out. When it is all uniform, add sunflower oil to fill the rest of the beaker and raise the handblender really slowly in order to let it incorporate to the previous emulsion while preserving the uniform texture. Tips: The egg, the lemon and the oils must be at nearly the same temperature, to prevent the emulsion from breaking down. A bit of a soft mustard can be poured at the same time as the egg to help the emulsion, a spoon of water may help instead too. If the taste of raw extra virgin olive oil is too sharp for you, a softer version can be made by adding the juice of the whole lemon and/or leveling the proportion of the two oils. The day after is the perfect timing for tasting, as it may have developed its optimal flavour. | Preparar una batidora, un bote y un exprimidor. Romper el huevo en el bote y añadir el zumo de medio limón. A continuación verter aceite de oliva hasta llenar 3/4 partes del bote y añadir un pellizco y medio de sal y uno de azúcar. Introducir la batidora y subir lentamente sintiendo como emulsiona el conjunto hasta que se haya incorporado todo el aceite. Cuando tenga una textura uniforme añadir aceite de girasol hasta llenar el bote y subir la batidora muy lentamente hasta que se incorpore a la emulsión conservando la textura uniforme. Trucos: El huevo, el limón y los aceites deben estar prácticamente a la misma temperatura para evitar que se corte la emulsión. Un poco de mostaza suave puesta a la vez que el huevo ayuda a que no se corte, así como una cucharada de agua. Si el sabor del aceite de oliva virgen extra resulta demasiado fuerte, se puede hacer una versión mas suave añadiendo el zumo del limón entero y/o equilibrando la proporción entre los dos aceites. Al día siguiente es el mejor momento para probarla, pues habrá desarrollado todo su sabor. |
